Recipes

Celery root soup

Serves 6 to 8

  • 2 pounds celery root, peeled
  • 1 onion
  • 2 cloves garlic
  • 1 small potato
  • 3 qts. Chicken broth or vegetable broth
  • ** 3 strips bacon
  • 1 bay leaf
  • 1 sprig fresh thyme or 2 tsp dry
  • Salt and pepper to taste
  • 1 ½ c cream or half and half

** Bacon is optional. If using bacon, begin by browning over low heat. Do not brown bottom of pan. Add onions celery root garlic and potatoes. Simmer slowly for ten minutes. Add bay leaf and cover with stock. Reduce heat add thyme and cover. Simmer until all vegetables are soft and flavors are well mingled, Approximately 1 hour. Remove from heat, cool for 30 minutes. Ladle small amounts into blender and blend thoroughly. Return smooth mixture to pot and return to low heat. Adjust seasoning with salt, pepper and cream.. may be made a day or two ahead. Reheat as necessary.
