Recipes

Marinated Cucumber, Summer Tomato and Sweet Onion Salad

Serves 4

  • 1 medium Vine ripe summer red tomato
  • 1 medium Vine ripe summer Yellow tomato
  • 1 medium Vidalia Onion
  • 3 medium Cucumbers
  • ½ cup White wine vinegar
  • ¼ cup Virgin Olive oil
  • 4 leaves Basil
  • ¼ cup granulated Sugar
  • 1 pinch Salt
  • 1 pinch Pepper

Combine Vinegar, sugar, salt and pepper. Wash and thin slice cucumbers and Onions, add to vinegar mixture, toss to coat. Let marinate for 1-2 hours. Medium dice red and yellow tomatoes and place in bowl. Add small amount of vinegar marinate to tomatoes, add olive oil, salt, pepper and chopped basil. On plate: fan cucumber slices in circular shape. Place marinated tomatoes in center of circular shape. Drizzle with vinegar mixture.
