Recipes

NC Organic Strawberries with Goat Cheese and Arugula

Serves 4

  • 1 qt strawberries, topped and cut in half
  • 8 oz goat cheese, fresh crumbled or sliced
  • 4 cups of arugula
  • 1/4 tbs. extra virgin olive oil
  • 4 tbs. balsamic vinegar
  • Salt and pepper to taste
  • Pecan, almond slivers or the like** optional
  • 3 tbs. sugar** optional

Cut and top strawberries, toss with sugar and balsamic vinegar. Refrigerate for 2 hours to marinate berries, and allow the juices to mingle with the vinegar. Meanwhile wash arugula and arrange on plates, either top with crumbled or sliced goat cheese. Spoon strawberries over greens, add olive oil, salt and pepper to the strawberry juice/ vinegar mix, this will serve as your dressing. Spoon over greens and add nuts if desired.
Serve immediately
